Stuffed Zucchini from Knorr® Quick Mexican-flavored rice and lots of Monterey Jack cheese make these baked, stuffed zucchini both quick and delicious!

Scoop out pulp of zucchini and chop. Heat oil in medium saucepan over medium heat and cook zucchini pulp, stirring occasionally, until tender, about 2 minutes. Stir in water and Knorr® Fiesta Sides – Mexican Rice. Bring to a boil. Reduce heat to low and simmer covered 7 minutes or until rice is tender.
Arrange zucchini on baking sheet. Evenly fill with rice mixture. Sprinkle with cheese. Bake 25 minutes or until zucchini are tender.
